Corn with an Attitude

From a fellow teacher . . . unique, delicious, and good for ya.

Innards:

1 can whole kernal corn (drained)
2 cans Mexi-corn (drained)
1 c chopped celery
1 c green peppers
1 chopped red onion
1 c shredded cheese
1 c low fat mayo
2 sm. cans sliced black olives


Mix all ingredients.

Topping:

Chili Cheese Fritos (crumbled)

Crumble a few Fritos on top - put the remaining on the side in a bowl so people can add their own and they'll stay crunchy.
