Carrot Cake
A masterpiece of flavor :)

 

Preheat oven to 375

Combine:

2 c cake flour
2 c sugar
2 t soda
2 t cinnamon
1 t salt
1 c oil
4 eggs
2 c shredded carrots
1 t vanilla

Combine flour, sugar, soda, salt, seasonings and oil.  Then beat in eggs, one at a time.  Add shredded carrots and vanilla.  Pour into 2 greased 9-inch cake pans.  Bake 30 mins.

Icing:

Cream together 8 oz cream cheese and 1/4 c (1 cube) softened butter.

Add 1 box powdered sugar (or as little as 1 cup if desired)
1 t vanilla
1 c chopped pecans
