Carrot Oil Cake
something a little different

 

Preheat oven to 325

Combine:

2 c flour
2 t baking powder
2 t baking soda
2 t cinnamon
1 t salt
1 1/2 c vegetable oil
2 c sugar
4 beaten eggs
1 c chopped pecans
3 c grated carrots *
1/2 c raisins

*I talked to a guy once who won an award for his carrot cake.  His secret ingredient was baby food carrots rather than grating them.  Sounds a lot easier, but I haven't tried it yet.  Let me know if you try it!

Combine all ingredients and bake in greased and floured pans for 1 1/2 hours.

Icing:

Cream together 8 oz cream cheese and 1/4 c (1 cube) softened butter.

Add 1 box powdered sugar (or as little as 1 cup if desired)
1 t vanilla
1 c chopped pecans
