Robin's Key Lime Pie
This is her oft-requested, favorite dessert.

 

Ingredients

Crust:
Keebler shortbread crust - or your favorite recipe for graham cracker crust

Filling:
5 large egg yolks
1 14 oz. can sweetened condensed milk
Juice of 6-8 Key limes (2/3 c)
whipped cream

 

Beat yolks 2 minutes. Add milk and lime juice.  Beat 2 mins.  Pour into shell. Bake 10-15 minutes.  Pour into shell.  Bake 10-15 mins until set.  Cool on cabinet 1 hour. 

Refridge with plastic wrap sitting on top of curd 3 hours or overnight.

Meringue:  beat 5 egg whites, add 1/4 cup sugar.  Spread over pie and bake at 350 until meringue browns.
