Broccoli Soup

I tried this first at a teacher luncheon and was hooked! This is not only great tasting, but good for you if you use the lower fat option added at the bottom.
2 lbs ground meat (browned and drained)
1 chopped onion
2 cans evaporated milk
2 cans regular Rotel (or mix regular and hot)  
2 lbs Velveeta cheese
2 frozen boxes of chopped broccoli
Mix and heat all together until cheese is melted and it is heated through.   Run it through a blender for just a little bit to mix thoroughly and reduce the bigger chunks of broccoli.

You can easily reduce the fat content by using ground sirloin, fat free evaporated milk, and low fat Velveeta.  

Really good with a box of  frozen 3 cheese Texas toast.
