Gazpacho

One of my oldest recipes from my good friend Linda, this is just great for a light summer lunch.
3 medium tomatoes, quartered
1 lg. peeled cucumber
1 lg. green pepper, quartered
1 lg. onion
2 cloves garlic, finely chopped
3 cups tomato juice
1/3 c vegetable oil
1/3 c. lime juice
1/4 t. hot pepper sauce
1 1/2 t. salt
1/4 t. pepper
1 cup garlic flavored croutons
1/2 c. chopped chives
Combine all ingredients. Cover and chill.  Serve with croutons
Makes about 6 cups.
