Borracho Beans This recipe is my most requested. Simple yet delicious.

| 2 cans pinto
beans (with jalapeños if you like it hot) 4 or 5 strips of crispy cooked bacon 12 oz container pico de gallo 1 tsp of any type seasoning (such as fajita seasoning; I usually use McCormick Grill Mates Spicy Montreal Steak). You might choose to use more than a teaspoon. Fry bacon - remove from pan and keep drippings. Add pico to drippings and sauté until translucent. Add beans and seasonings - heat through. Toward the end, add crumbled bacon. This is one of those recipes that tastes better as you let it sit - I usually make it the night before it's needed. |
